Recipe of the Week: Quick and Easy Granola

Ingredients 

3 cups oats 
1/2 cup dried cranberries
1/2 cup chopped dates
1/2 cup sliced almonds
2 tbsp. Just Great Stuff Powdered Peanut Butter
1 tbsp. ground flaxseed
1/2 cup coconut oil (melted) (I would do a heaping 1/2 cup)
1/2 cup honey (again a heaping 1/2 cup); if vegan use maple syrup or agave

Directions

Preheat your oven to 375 degrees. Line a baking sheet with parchment paper and set aside. Make sure that a rack is in the middle of the oven. In a mixing bowl add all of your dry ingredients (except fruit).
Melt your coconut oil in the microwave for about 45 seconds. Pour over top of your dry ingredients. Using the same measure as your coconut oil measure out the honey (if it is solid put in microwave for about 45 seconds).
The honey will come out easier because the coconut oil has coated the measuring cup. Also if the honey is a little warm it is easy to pour. Mix all your ingredients together and spread out on the baking sheet lined with parchment paper.
Bake for 10 minutes. Take out and flip and stir. The edges will be a little brown. Simply stir them into the middle. Put back in oven for 10 more minutes. Take out and it should have a golden brown color.
It is done baking, so add in your dried fruit. Let cool on the baking sheet and stir every few minutes to make sure the granola is getting crispy and done. Let completely cool before you put it in an air tight storage container.
