Sugar-Dusted Minerals Could Be the Ultimate Sweetener

By covering inert particles with sugar molecules, an Israeli startup has reduced the amount of sugar you need to achieve the same great taste.

The Israeli startup DouxMatok—‚which means "double sweet" in Hebrew—has created a new sweetener that could drastically reduce how much sugar you need to make something taste sweet. By coating inert mineral particles that have no caloric value with sugar molecules, DouxMatok developed a sugar substitute that (allegedly) tastes just like pure sugar.
DouxMatok is "a new sugar-based sweetener that allows for lower caloric intake, better health profile, while retaining the very same sugar experience," says DouxMatok CEO Eran Baniel.
Unlike artificial sweeteners such as aspartame and sucralose that have abrasive aftertastes by virtual of being fake sugar, DouxMatok's flavor comes entirely from the real stuff. The sugar-dusted particles have the same amount of sweet surface area as a full sugar particle. Because this is the only part of the particle that touches your tongue, the DouxMatok substitute triggers the same perception of sweetness as real sugar when it hits your sweet taste receptors.
DouxMatok can imitate the sweetness of any type of sugar, such as glucose and high fructose corn syrup, but the company primarily makes a substitute for sucrose, or table sugar. DouxMatok has been tested in chocolate, cookies, cakes, creams, and other deserts. Although a blind taste test demonstrated that people, including chefs, could taste no difference between DouxMatok-enhanced sucrose and regular table sugar, the difference in composition does affect the cooking process. Recipes need to be tweaked to retain the taste and texture of some deserts. The sweetness of DouxMatok can be enhanced 30 to 100 percent over of regular sugar, depending on what type of cooking the sweetener is being used for.
Various food products such as juices, jams, and cake mixes will likely include DouxMatok before consumers can buy it in powder form. Baniel says the price of DouxMatok will be the same as or less than table sugar, and he expects that products with the sweetener will hit grocery store shelves around the world within the next year-and-a-half.
